Super Greens & Wild Red Arugula Salad with Prosciutto, Burrata & Figs

This salad is a beautiful balance of peppery Wild Red Arugula, hearty Super Greens, and sweet, jammy figs. Creamy burrata adds indulgence, while ribbons of salty prosciutto crudo bring depth. Finished with a whisper-light dressing, this is a simple yet elegant plate that’s equally at home as a starter or a light meal.


Ingredients

5 oz Earthbound Farm Super Greens with Wild Red Arugula
4–5 fresh figs, quartered
3 oz prosciutto crudo, torn into strips
1 ball burrata, torn into large pieces
2 Tbsp extra-virgin olive oil
1 Tbsp white balsamic vinegar (or lemon juice)
½ tsp honey
Sea salt, to taste
Freshly cracked black pepper, to taste

 


Directions

Place the Super Greens with Wild Red Arugula in a large mixing bowl.
In a small bowl, whisk together olive oil, white balsamic vinegar (or lemon juice), and honey until
emulsified. Season lightly with salt and black pepper.
Arrange the greens on a platter or shallow bowl. Scatter the quartered figs evenly across the
greens. Nestle torn pieces of burrata throughout.
Drape strips of prosciutto between the figs and burrata for contrast.
Drizzle the light dressing over the salad just before serving. Finish with an extra crack of black
pepper.
